This cheese has a firm and moist texture with a full flavour. A light, crisp totally correct cheddar aged in a cave cut out of the chalk Downs, where the cows graze near Sevenoaks in Kent. The diary at Fairseat has many awards for taste and sustainability and are carbon neutral.
